- 3 tbsp granulated white sugar
- 1/2 tsp vanilla
- 1/4 cup granulated white sugar
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- pinch ground allspice
- 1–2 tbsp salted butter, melted
Instructions
- Simmer apple cider in a saucepan until reduced to about 1 cup; set aside.
- In one bowl, beat cream cheese with sugar and vanilla until smooth; chill.
- In another bowl, cream together butter and sugars until fluffy. Add egg yolks and vanilla; mix well.
- Gradually incorporate flour, spices, baking powder, baking soda, and salt.
- Preheat oven to 350°F (175°C). Scoop dough, flatten slightly, place cheesecake filling in center, seal with more dough.
- Bake cookies on parchment-lined sheets for about 11 minutes until edges are golden. Brush with melted butter and sprinkle with spiced sugar topping.
