  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 1 cup; set aside.
  2. In one bowl, beat cream cheese with sugar and vanilla until smooth; chill.
  3. In another bowl, cream together butter and sugars until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually incorporate flour, spices, baking powder, baking soda, and salt.
  5. Preheat oven to 350°F (175°C). Scoop dough, flatten slightly, place cheesecake filling in center, seal with more dough.
  6. Bake cookies on parchment-lined sheets for about 11 minutes until edges are golden. Brush with melted butter and sprinkle with spiced sugar topping.
