Instructions
- Heat olive oil in a large pot over medium-high heat. Add beef cubes in batches and sear until browned on all sides. Remove from pot.
- In the same pot, sauté diced onion and minced garlic until translucent.

- Return the beef to the pot along with remaining broth and add carrots, potatoes, parsnips, and celery.
