Ingredients
- 3 cups butternut squash, peeled, seeded, cubed
- 340 g Brussels sprouts, trimmed and halved
- 225 g bow tie pasta
- 340 g cooked smoked sausage (turkey or chicken)
- 5 cloves garlic, minced
- 4 tablespoons olive oil
- 2 tablespoons butter
- Salt and pepper to taste
- ¼ teaspoon smoked paprika
- Fresh thyme leaves
Instructions
- Preheat oven to 200°C (400°F).
- Toss butternut squash with 1 tablespoon olive oil, salt, and pepper; spread on a parchment-lined baking sheet and roast for 15-20 minutes.
- Toss Brussels sprouts with remaining olive oil, salt, and pepper; spread on another baking sheet and roast for 20-30 minutes until crispy.
- Cook bow tie pasta according to package instructions until al dente; drain and reserve some cooking water.
- In a large skillet, heat olive oil over medium heat. Slice sausage into coins and cook until browned; remove from skillet.
- Sauté garlic in the same skillet until fragrant. Add butter until melted; toss in cooked pasta along with reserved water, seasoning with salt, pepper, and smoked paprika.
