- 1 pound beef sirloin or flank steak, thinly sliced
- 1 package baby bok choy (about 1 lb)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons vegetable oil
- 2 tablespoons low-sodium soy sauce
- Optional: 1 tablespoon oyster sauce
Instructions
- Prepare all ingredients by slicing the beef against the grain and cleaning the bok choy.
- Heat a wok or large skillet over medium-high heat, adding vegetable oil.
- Sear the beef in a single layer for 2-3 minutes without stirring, then flip to brown for another minute. Set aside.
- In the same pan, sauté garlic and ginger for about 30 seconds until fragrant. Add bok choy and stir-fry for 2-3 minutes until just wilted.
- Return beef to the pan, mix with bok choy, pour in soy sauce (and oyster sauce if using), and heat through for about a minute.
