Ingredients

Scale
  • 1 pound beef sirloin or flank steak, thinly sliced
  • 1 package baby bok choy (about 1 lb)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • Optional: 1 tablespoon oyster sauce

Instructions

  1. Prepare all ingredients by slicing the beef against the grain and cleaning the bok choy.
  2. Heat a wok or large skillet over medium-high heat, adding vegetable oil.
  3. Sear the beef in a single layer for 2-3 minutes without stirring, then flip to brown for another minute. Set aside.
  4. In the same pan, sauté garlic and ginger for about 30 seconds until fragrant. Add bok choy and stir-fry for 2-3 minutes until just wilted.
  5. Return beef to the pan, mix with bok choy, pour in soy sauce (and oyster sauce if using), and heat through for about a minute.
  6. Serve hot over rice or noodles.
