Ingredients
- 10–11 strips cooked Turkey
- 2 heads broccoli (about 1.5 pounds)
- 1 cup dried cranberries
- 1/3 cup roasted and salted sunflower seeds
- 1 cup shredded cheddar cheese
- 1/3 cup chopped red onion
- 1 & 1/4 cups Miracle Whip OR mayonnaise
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 2 tablespoons white apple vinegar
- 1/4 cup sugar
- 1 & 1/4 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
Instructions
- Preheat your oven and cook the Turkey until crispy. Place on paper towels to cool before chopping into bite-sized pieces.
- In a large mixing bowl, combine Miracle Whip or mayonnaise, lemon zest, lemon juice, vinegar, sugar, salt, pepper, dry mustard, and cayenne pepper. Whisk until smooth.
- Chop broccoli into small florets and add to the dressing along with cranberries, sunflower seeds, cheddar cheese, and most of the chopped Turkey. Mix until well combined.
- Chill in the refrigerator for at least 20 minutes before serving for optimal flavor.
