  • 1011 strips cooked Turkey
  • 2 heads broccoli (about 1.5 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted and salted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip OR mayonnaise
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons white apple vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat your oven and cook the Turkey until crispy. Place on paper towels to cool before chopping into bite-sized pieces.
  2. In a large mixing bowl, combine Miracle Whip or mayonnaise, lemon zest, lemon juice, vinegar, sugar, salt, pepper, dry mustard, and cayenne pepper. Whisk until smooth.
  3. Chop broccoli into small florets and add to the dressing along with cranberries, sunflower seeds, cheddar cheese, and most of the chopped Turkey. Mix until well combined.
  4. Chill in the refrigerator for at least 20 minutes before serving for optimal flavor.
