  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. In a skillet over medium-high heat, heat olive oil and butter; sear chicken until golden brown, about 4-5 minutes per side. Remove and set aside.
  3. In the same skillet, sauté minced garlic; add heavy cream and milk. Stir in Velveeta until melted. Add mozzarella and Parmesan cheese until creamy.
  4. Toss cooked rotini with sauce and return chicken to pan or plate separately. Garnish with chopped parsley if desired.
