  • 3 cups chopped broccoli florets
  • 6 tbsp all-purpose flour
  • 3 cups milk (preferably 1% or 2%)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add carrots, celery, and onion; sauté for about 3–4 minutes until softened.
  3. Stir in minced garlic; sauté for another 30 seconds until fragrant.
  4. Pour in chicken broth, add cubed potatoes, thyme, salt, and pepper; bring to a boil.
  5. Reduce heat, cover, and simmer for about 15 minutes until potatoes are tender.
  6. Add broccoli florets; cook for an additional 5 minutes until tender.
  7. In a separate saucepan, melt remaining butter over medium heat. Whisk in flour; cook for one minute while stirring constantly.
  8. Gradually add milk while whisking until smooth; continue cooking until thickened then stir in heavy cream.
  9. Combine the creamy mixture with the soup mixture; stir well to blend.
  10. Remove from heat; mix in shredded cheddar until melted.
  11. Serve warm and enjoy!
