Ingredients
- 500g diced chicken breast
- 2 cups broccoli florets
- 2 cups sliced mushrooms
- 1 small chopped onion
- 2 minced garlic cloves
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 cup jasmine or basmati rice
- 2 cups water
- Pinch of salt
- 1 tsp cornstarch + 2 tbsp water (for slurry)
- Salt & pepper to taste
- Chili flakes (optional)
Instructions
- Cook rice: In a pot, boil 2 cups water, add rice and salt, then simmer for 15 minutes until fluffy.
- Prepare chicken: Heat olive oil in a skillet over medium-high heat. Sauté the chicken with salt and pepper until cooked through (5-7 minutes). Remove from pan.
- Sauté vegetables: Add sesame oil to the same skillet; cook onion and garlic until fragrant. Then add broccoli and mushrooms, stir-frying until tender-crisp.
- Combine: Return chicken to the skillet, add soy sauce and stir well. Mix in a cornstarch slurry (1 tsp cornstarch + 2 tbsp water) to thicken the sauce.
