  • 2 cups broccoli florets
  • 2 cups sliced mushrooms
  • 1 small chopped onion
  • 2 minced garlic cloves
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • Salt & pepper to taste
  • Chili flakes (optional)

Instructions

  1. Cook rice: In a pot, boil 2 cups water, add rice and salt, then simmer for 15 minutes until fluffy.
  2. Prepare chicken: Heat olive oil in a skillet over medium-high heat. Sauté the chicken with salt and pepper until cooked through (5-7 minutes). Remove from pan.
  3. Sauté vegetables: Add sesame oil to the same skillet; cook onion and garlic until fragrant. Then add broccoli and mushrooms, stir-frying until tender-crisp.
  4. Combine: Return chicken to the skillet, add soy sauce and stir well. Mix in a cornstarch slurry (1 tsp cornstarch + 2 tbsp water) to thicken the sauce.
