  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, heat olive oil. Season chicken breasts with salt, pepper, and thyme. Sear for 5–6 minutes per side until golden brown; remove from skillet.
  3. Sauté minced garlic for 1 minute in the same skillet. Add sliced mushrooms; cook for about 5 minutes until softened. Stir in chopped spinach until wilted.
  4. Pour in heavy cream and chicken broth; stir until combined and bring to a simmer for about 3–4 minutes until slightly thickened.
  5. Place the chicken in the prepared baking dish; pour the creamy sauce over it. Sprinkle cheeses on top.
  6. Bake for 15–20 minutes until cheese is melted and bubbly.
