- 1 chicken breast, cut into strips
- 1 tsp olive oil
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 cup chopped onion
- 1 tbsp low-sodium soy sauce
- 1 tsp garlic powder
- Salt & pepper, to taste
- 1 cup cooked brown rice
- Optional: chili flakes or sesame oil
- Optional: pinch of salt or a drizzle of olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken strips and cook for 6–8 minutes until browned and cooked through. Set aside.
- In the same skillet, add chopped zucchini, broccoli, red bell pepper, and onion. Sauté for 5–7 minutes until veggies are tender-crisp. Stir in soy sauce and garlic powder before returning the chicken to the pan.
- Warm up cooked brown rice in a separate pot or microwave, fluff it with a fork when heated.
- Serve generous portions of stir-fry alongside brown rice and garnish as desired.
