Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken strips and cook for 6–8 minutes until browned and cooked through. Set aside.
  2. In the same skillet, add chopped zucchini, broccoli, red bell pepper, and onion. Sauté for 5–7 minutes until veggies are tender-crisp. Stir in soy sauce and garlic powder before returning the chicken to the pan.
  3. Warm up cooked brown rice in a separate pot or microwave, fluff it with a fork when heated.
  4. Serve generous portions of stir-fry alongside brown rice and garnish as desired.
