  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Salt & pepper
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Shape into golf ball-sized meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; remove and set aside.
  3. In the same skillet, cook sliced onion and bell peppers until softened. Stir in minced garlic and smoked paprika.
  4. Add chicken stock and heavy cream; mix well. Return meatballs to the skillet and simmer for 10-12 minutes until cooked through.
  5. Serve warm topped with chopped parsley.
