  • 23 garlic cloves (chopped)
  • 1½ teaspoon ground cumin
  • 1 tablespoon chili powder
  • 15 ounces diced fire-roasted tomatoes
  • 4 cups low sodium chicken broth
  • 14.5 ounces red kidney beans (drained and rinsed)
  • 14.5 ounces black beans (drained and rinsed)
  • 2 cups shredded cooked chicken
  • 1 cup Mexican shredded cheese blend (for garnishing)

Instructions

  1. In a large stockpot, melt the butter or ghee over medium-high heat. Add the diced onion, celery, carrot, red bell pepper, and chopped garlic. Sauté until softened, about 5-6 minutes.
  2. Stir in the ground cumin, chili powder, diced tomatoes, and chicken broth. Season with salt and pepper to taste. Bring to a boil, then reduce heat to simmer for about 10-15 minutes until vegetables are very tender.
  3. Remove from heat and blend the soup until smooth using a hand blender. Return to medium heat.
  4. Stir in the kidney beans, black beans, corn, and shredded chicken; heat through for another couple of minutes.
  5. Serve hot topped with Mexican cheese or your favorite garnishes.
