  • 2 tablespoons olive oil

  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup grated Parmesan cheese, for topping and sauce

  • 1/2 cup reserved pasta water, if needed

Instructions

  1. Season the chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
  2. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter. Sear the chicken until golden brown on both sides. Set aside.
  3. Boil salted water in a pot; cook linguine until al dente. Reserve some pasta water before draining.
  4. In the same skillet, melt remaining butter; sauté garlic briefly before adding heavy cream and Velveeta until smooth.
  5. Stir in mozzarella and Parmesan until combined. Add drained linguine and toss to coat in sauce.
  6. Serve with seared chicken on top and garnish as desired.
