Instructions
- In a large pot over medium heat, warm the olive oil and cook the crumbled chicken sausage until browned. Drain excess fat and add Italian seasoning and paprika.
- Mix in the sweet potato, garlic, red pepper flakes, and tomato paste.
- Pour in the water and bring to a boil while stirring to dissolve the tomato paste.
- Once boiling, reduce heat and simmer for about 15 minutes until sweet potatoes are tender.
- Add tortellini and cook according to package instructions for approximately 10 minutes.
- Stir in fresh spinach just before serving until wilted.
