  • 1 tablespoon olive oil

  • 1 teaspoon paprika
  • 1 large sweet potato (peeled and cubed)
  • 5 cloves garlic (minced)
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water
  • 8 oz three-cheese tortellini (refrigerated)
  • 4 oz fresh spinach
  • 1/2 cup heavy cream
  • 4 tablespoons fresh thyme

Instructions

  1. In a large pot over medium heat, warm the olive oil and cook the crumbled chicken sausage until browned. Drain excess fat and add Italian seasoning and paprika.
  2. Mix in the sweet potato, garlic, red pepper flakes, and tomato paste.
  3. Pour in the water and bring to a boil while stirring to dissolve the tomato paste.
  4. Once boiling, reduce heat and simmer for about 15 minutes until sweet potatoes are tender.
  5. Add tortellini and cook according to package instructions for approximately 10 minutes.
  6. Stir in fresh spinach just before serving until wilted.
  7. Remove from heat and mix in heavy cream. Adjust seasoning as needed.
