  • 1 + 1/2 lb cauliflower, cut into florets
  • 1 + 1/22 lb tomatoes, sliced in half lengthwise
  • 1 yellow onion, roughly chopped
  • 6 cloves of garlic, smashed and peeled
  • 3 tbsp olive oil
  • 1/2 cup raw cashews
  • 1 (15 oz) can white beans, drained and rinsed
  • 4 cups low sodium vegetable broth
  • 1 (28 oz) can whole peeled tomatoes, including their juices
  • 1 tsp Italian seasonings
  • Red pepper flakes, to taste
  • Juice of 1 lemon

Instructions

  1. Soak cashews in water while preparing other ingredients.
  2. Preheat oven to 425°F and line a baking sheet with parchment paper.
  3. Combine cauliflower, tomatoes, onion, garlic, olive oil, salt, and pepper on the baking sheet; roast for about 40 minutes.
  4. Transfer roasted veggies to a blender with vegetable broth and canned tomatoes; blend until smooth.
  5. Pour blended mixture into a large pot; season and simmer for 10-15 minutes.
  6. Blend soaked cashews with white beans and milk until creamy.
  7. Stir creamy mixture into the soup; simmer an additional 5-10 minutes before serving.
