  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 tbsp vanilla bean paste
  • 1/2 cup granulated sugar (for rolling the dough in)
  • 1/2 cup granulated sugar (for the brulee topping)

Instructions

  1. Prepare the pastry cream by heating milk and half the sugar in a saucepan. In another bowl, whisk together egg yolks, remaining sugar, cornstarch, salt, and vanilla until smooth. Gradually add hot milk to the yolk mixture while whisking. Return to low heat and cook until thickened. Stir in butter and cool.
  2. For the cookie dough, cream softened butter and sugar until fluffy. Add egg and vanilla; mix well. In a separate bowl, whisk flour, baking powder, and salt; gradually combine with wet mixture.
  3. Roll out dough to ¼ inch thick on a floured surface. Cut out shapes and place on lined baking sheets. Spoon cooled pastry cream onto each cookie.
  4. Bake at 350°F (175°C) for about 9 minutes or until edges are lightly golden.
  5. Sprinkle granulated sugar over pastry cream on cookies and caramelize using a kitchen torch or broiler.
