Ingredients

Scale
  • 1 block extra-firm tofu, pressed and cut into cubes
  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 avocado, sliced

Instructions

  1. Press the tofu to remove excess moisture for a crispier texture.
  2. In a bowl, mix cornstarch, flour, garlic powder, salt, and pepper. Toss tofu cubes to coat evenly.
  3. Heat oil in a skillet over medium-high heat and cook tofu until golden brown and crispy on all sides.
  4. Whisk together soy sauce, rice vinegar, honey, minced garlic, and sesame oil for the teriyaki sauce.
  5. Boil vegetable broth in a pot; add brown rice and salt. Cover and simmer for 15-20 minutes until tender.
  6. Assemble by layering cooked rice in a bowl, topping with sliced avocado and crispy tofu. Drizzle with teriyaki sauce before serving.
