  • 1 can (28 ounces) crushed fire-roasted tomatoes
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 3 tablespoons salted butter
  • 23 cups chicken or beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (8 ounces) tomato paste
  • 1 can (4 ounces) diced green chilies
  • 1/3 cup hot sauce
  • 2 bay leaves
  • Salt to taste
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Chop onions and poblano peppers.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. In the slow cooker, combine browned beef with onions, peppers, spices, tomatoes, butter, bay leaves, salt, and broth.
  4. Cook on low for about 120 minutes until heated through.
  5. Stir in cream cheese until melted; then gradually mix in cheddar cheese.
  6. Serve hot topped with chili beans, cilantro, green onions, avocado, and Greek yogurt.
