  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 cloves minced garlic
  • 1/4 cup low-sodium chicken stock
  • 1/2 tbsp cornstarch

Instructions

  1. In a small bowl, mix together the soy sauces, vegetarian stir fry sauce, sesame oil, garlic, chicken stock, and cornstarch. Set aside.
  2. Heat water in a large pan until boiling. Blanch chow mein noodles for 20-30 seconds until loosened. Drain in a colander.
  3. In the same pan, heat vegetable oil over medium-high heat and sauté onions, cabbage, and celery for about one minute until softened.
  4. Push the veggies to the side of the pan. Add the drained noodles and pour in the prepared sauce. Toss everything together until well combined.
  5. Remove from heat and serve hot.
