- 1 lb fresh chow mein noodles
- 2 cups thinly sliced cabbage
- 1 cup sliced celery
- 1 small sliced onion
- 2 tbsp vegetable oil
- 2 tbsp regular soy sauce
- 1/2 tbsp dark soy sauce
- 2 tbsp vegetarian stir fry sauce
- 1 tbsp sesame oil
- 2 cloves minced garlic
- 1/4 cup low-sodium chicken stock
- 1/2 tbsp cornstarch
Instructions
- In a small bowl, mix together the soy sauces, vegetarian stir fry sauce, sesame oil, garlic, chicken stock, and cornstarch. Set aside.
- Heat water in a large pan until boiling. Blanch chow mein noodles for 20-30 seconds until loosened. Drain in a colander.
- In the same pan, heat vegetable oil over medium-high heat and sauté onions, cabbage, and celery for about one minute until softened.
- Push the veggies to the side of the pan. Add the drained noodles and pour in the prepared sauce. Toss everything together until well combined.
- Remove from heat and serve hot.
