- 8 oz dry rotini pasta
- 9 oz hard turkey slices, chopped
- 6.5 oz turkey pepperoni, chopped
- 1 cup canned artichoke hearts, drained & quartered
- 2 cups cherry tomatoes, halved
- 1 cup olives, pitted & halved
- ½ cup pepperoncini, sliced
- 8 oz mozzarella pearls
- ¼ cup red onion, thinly sliced
- ⅓ cup fresh basil, sliced
- ½ cup olive oil
- ¼ cup red apple vinegar
- 2 cloves garlic, minced
- 1 Tbsp Italian seasoning
- ¼ tsp red pepper flakes
- Salt & black pepper, to taste
Instructions
- Cook the pasta according to package instructions; drain and cool completely.
- In a small bowl, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper; chill.
- Prepare the salad ingredients by chopping turkey and pepperoni, halving tomatoes and olives, slicing onions and basil.
- In a large mixing bowl, combine cooled pasta with all prepared ingredients; toss with the dressing until evenly coated.
- Chill for at least 30 minutes before serving for enhanced flavor.
