  • 60 ml bean canning liquid
  • 1.5 cloves garlic
  • 2 yellow onions
  • 1.5 teaspoons smoked paprika
  • 3 tablespoons tomato paste
  • 125 ml sunflower oil
  • 1.25 teaspoons salt

Instructions

  1. Drain and rinse the canned white beans. In a food processor, combine the beans, bean canning liquid (60 ml), half of the salt, and minced garlic. Blend until smooth.
  2. Slice the onions and heat sunflower oil in a non-stick skillet over low to medium-low heat. Add onions, tomato paste, remaining salt, and a dash of smoked paprika.
  3. Stir to coat the onions evenly with tomato paste. Cook for about 10 minutes, stirring occasionally.
  4. Add the remaining smoked paprika and continue cooking for another 8-10 minutes until the onions are golden brown.
  5. Remove from heat when caramelized and serve by spreading the bean mixture in a bowl topped with caramelized onions.
