  • 6 slices turkey bacon, chopped
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 lb mushrooms, quartered
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping vegetables and cutting beef into chunks.
  2. In a large pot over medium heat, heat olive oil. Add turkey bacon and cook until crisp; set aside.
  3. Season beef with salt and pepper and brown in batches in the same pot. Remove each batch when done.
  4. Sauté onions, carrots, and garlic until onions are translucent.
  5. Sprinkle flour over vegetables and stir well to coat.
  6. Return beef and turkey bacon to pot; stir in tomato paste and bouquet garni. Bring to a boil then reduce to simmer for about 2 hours.
  7. Sauté mushrooms separately until golden brown; add them to the stew during the last 30 minutes of cooking.
