- 1 can (14 oz/400 g) cherry tomatoes
- 3 tbsp chopped basil leaves
- 2 mozzarella balls (chopped)
- 3 tbsp grated Parmesan
- Crushed red pepper flakes (for sprinkling)
Instructions
- Season chicken fillets with salt, pepper, garlic powder, and paprika.
- Heat olive oil and butter in a large skillet over medium-high heat. Cook chicken for 5 minutes on each side until browned.
- Remove chicken; add minced garlic and chopped shallot to the skillet and sauté until fragrant.
- Deglaze with apple vinegar; then stir in salt, pepper, dried basil, and tomato paste.
- Pour in chicken broth and add cherry tomatoes; bring to a boil then simmer for 5 minutes.
- Nestle chicken back into the sauce; top with chopped basil and mozzarella.
- Simmer for an additional 5 minutes or bake at 400°F (200°C) until golden.
