  • 1 English cucumber
  • 10 oz cherry tomatoes
  • 1 green pepper
  • 1/2 red onion
  • 5 oz kalamata olives
  • 8 oz feta cheese
  • 3 tbsp fresh parsley
  • 1/3 cup olive oil
  • 1/3 cup water
  • 3 tbsp red apple vinegar
  • 1/2 lemon, juiced
  • 2 tbsp honey
  • 2 tsp dijon mustard
  • 3 garlic cloves, minced
  • 1 tbsp fresh dill
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook the bowtie pasta in boiling water until al dente. Drain and cool.
  2. In a large mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped green pepper, chopped red onion, and halved kalamata olives.
  3. For the vinaigrette, whisk together olive oil, water, red apple vinegar, lemon juice, honey, Dijon mustard, minced garlic, salt, and black pepper.
  4. Add cooled pasta to the vegetable mixture and toss with vinaigrette until well coated.
  5. Gently fold in cubed feta cheese and fresh herbs before chilling in the refrigerator for at least 30 minutes.
