- 8 oz bowtie pasta
- 1 English cucumber
- 10 oz cherry tomatoes
- 1 green pepper
- 1/2 red onion
- 5 oz kalamata olives
- 8 oz feta cheese
- 3 tbsp fresh parsley
- 1/3 cup olive oil
- 1/3 cup water
- 3 tbsp red apple vinegar
- 1/2 lemon, juiced
- 2 tbsp honey
- 2 tsp dijon mustard
- 3 garlic cloves, minced
- 1 tbsp fresh dill
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook the bowtie pasta in boiling water until al dente. Drain and cool.
- In a large mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped green pepper, chopped red onion, and halved kalamata olives.
- For the vinaigrette, whisk together olive oil, water, red apple vinegar, lemon juice, honey, Dijon mustard, minced garlic, salt, and black pepper.
