Instructions

  1. In a bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, mix melted coconut oil or butter with the egg and almond extract. Stir in maple syrup and almond milk until well combined.
  3. Combine both mixtures and fold in diced peaches. Chill dough for 30 minutes.
  4. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  5. Drop rounded scoops of dough onto the sheet and flatten slightly. Bake for 9-12 minutes until golden around the edges.
