  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper.
  2. In a large mixing bowl, mash the bananas thoroughly. Add the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt. Whisk until well combined.
  3. Gently fold in the whole wheat flour until just combined; avoid overmixing to keep the bread light.
  4. Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
  5. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
