  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. For the crust, cream together softened butter and sugar until fluffy, then mix in flour and salt. Press into the prepared pan and bake for 15 minutes.
  3. While the crust bakes, prepare the peach filling by mixing diced peaches with sugar, lemon juice, and cornstarch.
