- 1/2 cup unsalted butter (melted & cooled) or oil
- 4 egg whites (or 3 whole eggs)
- 1 cup buttermilk (or milk/water)
- 1 tablespoon vanilla extract
- 1 cup unsalted butter (softened) for frosting
- 2 & ½ cups powdered sugar
- Pinch salt
- 6 oz high-quality white chocolate (chopped)
- ¼ cup cream or milk
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, combine the cake mix, melted butter (or oil), egg whites (or whole eggs), buttermilk, and vanilla extract. Mix until just combined.
- Pour batter evenly into liners and bake for about 20 minutes or until a toothpick comes out clean. Let cool completely.
- For frosting, beat softened butter until creamy, gradually add powdered sugar and salt. Melt white chocolate and mix into the butter along with cream/milk and vanilla extract until fluffy.
- Frost cooled cupcakes generously as desired.
