  • 1/2 cup unsalted butter (melted & cooled) or oil
  • 4 egg whites (or 3 whole eggs)
  • 1 cup buttermilk (or milk/water)
  • 1 tablespoon vanilla extract
  • 1 cup unsalted butter (softened) for frosting
  • 2 & ½ cups powdered sugar
  • Pinch salt
  • 6 oz high-quality white chocolate (chopped)
  • ¼ cup cream or milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine the cake mix, melted butter (or oil), egg whites (or whole eggs), buttermilk, and vanilla extract. Mix until just combined.
  3. Pour batter evenly into liners and bake for about 20 minutes or until a toothpick comes out clean. Let cool completely.
  4. For frosting, beat softened butter until creamy, gradually add powdered sugar and salt. Melt white chocolate and mix into the butter along with cream/milk and vanilla extract until fluffy.
  5. Frost cooled cupcakes generously as desired.
