- 3/4 cup (1 1/2 sticks) butter, softened for filling
- 2 cups powdered Swerve
- 1 teaspoon pure vanilla extract for filling
- 1 tablespoon heavy whipping cream
Instructions
- In a food processor, combine flaked coconut, sliced almonds, almond flour, coconut flour, baking powder, cinnamon, and salt until it resembles oatmeal flakes.
- In a large bowl, cream softened butter with Swerve Sweeteners until light and fluffy. Beat in the egg and vanilla extract.
- Mix the dry ingredients into the wet mixture until well combined. Chill the dough for at least 30 minutes.
- Preheat oven to 325°F (163°C). Roll out chilled dough to 1/3 inch thick and cut into shapes on a parchment-lined baking sheet.
