Ingredients
- 4 cups shredded zucchini (about 4 medium zucchini)
- 1/2 cup diced yellow onion
- 2 tbsp minced garlic
- 2 beaten eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 3/4 cup grated Parmesan cheese (divided)
- 1/2 cup crushed beef rinds or Parmesan cheese crisps
- 3 tbsp butter
Instructions
- Preheat oven to 375°F and spray an 8” x 8” baking dish with non-stick cooking spray.
- Drain shredded zucchini thoroughly using cheesecloth or a cotton kitchen towel.
- In a mixing bowl, combine drained zucchini with diced onion, minced garlic, beaten eggs, mozzarella, cheddar, and half of the Parmesan cheese.
- Pour the mixture into the prepared baking dish and bake for about 20 minutes until set.
- While baking, melt butter and mix with crushed beef rinds (or Parmesan crisps) and remaining Parmesan.
- After initial baking, sprinkle topping mixture over the casserole and bake for an additional 5–8 minutes until golden brown.
- Remove from oven, cool slightly, season with salt and pepper to taste, and serve.
