  • 1 cup powdered sugar (divided)

  • 12 oz cream cheese (softened)
  • 1 jar lemon curd

Instructions

  1. Prepare the crust by mixing crushed graham crackers, sugar, and melted butter in a bowl. Press into dessert cups.
  2. Dissolve vegan gelatin by combining lemon juice and water in a bowl and sprinkling the gelatin on top.
  3. Whip heavy cream until soft peaks form; add powdered sugar.
  4. In another bowl, whip cream cheese until smooth; mix in lemon curd and remaining powdered sugar.
  5. Heat the vegan gelatin mixture in the microwave until dissolved; let cool slightly.
