  • 2 large eggs
  • 2 tablespoons canola oil (plus more for frying)

  • 8 oz. ricotta cheese
  • Zest of 1 lemon
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a blender, combine milk, eggs, canola oil, flour, sugar, and a pinch of salt. Blend until smooth.
  2. Cover and refrigerate the batter for at least one hour or overnight for best results.
  3. Heat a non-stick skillet over medium-high heat and lightly grease with oil.
  4. Pour a small amount of batter into the pan while tilting to spread evenly.
  5. Cook until golden brown on one side (about 20 seconds), then flip and cook for an additional 15 seconds.
  6. Repeat until all batter is used.
  7. For the filling, blend ricotta cheese, lemon zest, sugar, vanilla extract, and milk in a food processor until creamy.
  8. Fill each warm crepe with the ricotta mixture, roll or fold as desired.
