- 2 Tbsp extra virgin olive oil
- 3 stalks celery, diced
- 1 medium yellow onion, diced
- 4 cloves garlic, minced or crushed
- pinch red pepper flakes
- 14 ounces canned artichoke hearts, drained and chopped
- 1/2 cup marinated sun-dried tomatoes, sliced
- 32 ounces chicken stock or broth
- 1 Tbsp lemon juice
- salt and fresh cracked black pepper
- 1 cup packed fresh spinach
- 1/2 cup heavy cream
- 1 cup shredded or grated Asiago or Parmesan cheese
Instructions
- In a large soup pot, heat 2 tablespoons of olive oil over medium heat. Add diced celery, onion, minced garlic, and a pinch of red pepper flakes. Sauté for 5 minutes until softened.
- Incorporate 14 ounces of chopped artichoke hearts, 1/2 cup of sliced sun-dried tomatoes, 32 ounces of chicken stock, and 1 tablespoon of lemon juice. Bring to a simmer for another 5 minutes.
- Stir in 1 cup of fresh spinach until wilted, then add 1/2 cup of heavy cream while returning to a simmer. Season with salt and cracked pepper to taste.
- Remove from heat and mix in 1 cup of shredded cheese until melted. Serve hot with additional cheese on top.
