  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 6 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups dry apple vinegar
  • 2 cups beef or lamb stock
  • 2 bay leaves
  • 2 sprigs rosemary
  • 3 sprigs thyme

Instructions

  1. Prepare all ingredients by chopping vegetables and seasoning the lamb shanks with salt and pepper.
  2. In a Dutch oven over medium-high heat, add olive oil and sear the lamb shanks on all sides until browned (about 5–7 minutes). Remove and set aside.
  3. In the same pot, sauté onions, carrots, celery, and garlic until softened (4–5 minutes).
  4. Stir in tomato paste; then pour in apple vinegar and beef/lamb stock. Add bay leaves, rosemary, thyme, and return lamb shanks to the pot.
  5. Cover and cook: Braise in the oven at 325°F (160°C) for about 2–3 hours or slow-cook on low for about 8 hours until tender.
