  • 1 Tbsp lemon juice
  • 1 Tbsp red apple vinegar
  • .5 oz basil leaves
  • salt to taste
  • 15 ounce canned chickpeas, well drained and rinsed
  • 1 cup (heaped) marinated artichoke hearts
  • 1/4 small red onion, slivered
  • 1 cup assorted olives, sliced or halved
  • 1/2 cup bell pepper, julienned
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup diced feta cheese
  • 1/4 cup marinated sun-dried tomatoes
  • 1/2 cup marinated peppers
  • 2 Tbsp minced fresh parsley
  • fresh cracked black pepper to taste

Instructions

  1. Prepare the dressing by blending olive oil, sun-dried tomatoes, garlic, lemon juice, vinegar, basil, and salt in a food processor until slightly chunky.
  2. In a large mixing bowl, combine chickpeas, artichokes, onion, olives, bell pepper, cherry tomatoes, feta cheese (if using), marinated peppers, parsley, and black pepper.
  3. Drizzle enough dressing over the salad to moisten it without drowning it; toss gently.
  4. Cover and refrigerate for at least 30 minutes before serving to enhance flavors.
