  • 2 mini cucumbers, chopped

  • 1 cup cherry or grape tomatoes, halved

Instructions

  1. Rinse the chickpeas under cold water and add them to a large mixing bowl.
  2. Chop the cucumbers, red onion, oregano, parsley, red bell pepper, and tomatoes into small pieces and add them to the bowl.
  3. In a separate bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
  5. Taste and adjust seasoning as needed before serving.
