Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, mix together shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry mixture to the wet ingredients until just combined.
  5. For the cinnamon swirl, mix granulated sugar with cinnamon in a small bowl.
  6. Pour half of the batter into the prepared loaf pan; sprinkle half of the cinnamon mixture on top. Add the remaining batter and finish with the rest of the cinnamon mixture. Gently swirl with a knife.
  7. Bake for 60–65 minutes or until golden brown; check doneness with a toothpick.
  8. Let cool for 10–15 minutes before transferring to a wire rack.
