  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1/2 tsp Italian seasoning
  • 3 tbsp butter, divided
  • Zest and juice of 1 lemon
  • 8 oz linguine
  • 3/4 cup grated Parmesan cheese

Instructions

  1. Season chicken pieces with Italian seasoning. In a large skillet, melt 2 tablespoons of butter over medium heat. Add chicken and cook until golden brown and cooked through, about 6–8 minutes.
  2. While the chicken cooks, boil salted water in a separate pot. Add linguine and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.
  3. Once the chicken is done, add cooked linguine to the skillet with the chicken. Stir in remaining butter, lemon zest, lemon juice, and grated Parmesan cheese until creamy.
  4. If needed, gradually add reserved pasta water until desired consistency is achieved. Season with salt and pepper.
  5. Serve hot and garnish with extra Parmesan cheese if desired.
