  • 2 peaches, thinly sliced

  • 1/2 cup raw pumpkin seeds
  • 1/4 cup maple syrup
  • 2 teaspoons olive oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons honey
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 275°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine pecans, pumpkin seeds, maple syrup, olive oil, vanilla extract, salt, and pepper. Mix well to coat all nuts evenly.
  3. Spread the mixture onto the prepared baking sheet in an even layer. Bake for 35 minutes, rotating the pan halfway through to ensure even cooking.
  4. Remove from oven and allow to cool completely. Once cooled, break into small pieces.
  5. In another medium bowl, whisk together olive oil, balsamic vinegar, honey, vanilla extract, Dijon mustard, salt, black pepper, and garlic powder until well combined.
  6. On a large platter, layer arugula as your base. Add sliced cucumbers on top. Sprinkle fresh blueberries and peach slices over everything. Crumble feta cheese on top.
