  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine flour, baking soda, and sea salt; set aside.
  3. In another bowl, cream together unsalted butter, granulated sugar, and brown sugar until fluffy. Beat in the egg (or flax egg) and vanilla until well combined.
  4. Gradually mix dry ingredients into wet ingredients until just incorporated.
  5. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart.
  6. Bake for 12 minutes until edges are golden. Allow to cool on sheets before transferring to a rack.
  7. For ganache: Melt chocolate chips with heavy cream over low heat; let cool slightly.
  8. Make marshmallow fluff by boiling water, granulated sugar, and corn syrup; combine with whipped egg whites until fluffy.
  9. Assemble sandwiches: Spread ganache on half the cookies, add marshmallow fluff, then top with another cookie.
