Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with foil.
  2. Cut the zucchini into matchsticks about 1/4-inch thick.
  3. In a shallow dish, mix Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dry parsley, salt, and pepper.
  4. Beat the eggs in another shallow dish until combined.
  5. Place the zucchini matchsticks in a large zipper bag with flour; shake to coat.
