Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread halved cherries on it and sprinkle with sugar. Roast for 10 minutes until softened and let cool.
  2. Lower the oven temperature to 325°F (165°C). Prepare an 8X8-inch baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In another bowl, beat sugar, eggs, and egg yolk until thick and pale using an electric mixer. Add melted butter, oil, and vanilla; mix until combined.
  5. Gently fold in dry ingredients until just combined. Incorporate half of the roasted cherries and chocolate chips into the batter.
  6. Pour the batter into the prepared pan and bake for 40-50 minutes until edges are set but center is slightly underdone.
  7. Allow cooling completely before lifting out using parchment paper and cutting into squares.
