  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest and juice from 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion (quartered)
  • 1 cup chicken broth

Instructions

  1. In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper.
  2. Rinse the chicken under cold water and pat dry. Rub the marinade all over the chicken and refrigerate for at least 30 minutes or overnight.
  3. Preheat your oven to 375°F (190°C). Place the marinated chicken in a roasting pan with quartered onions and pour chicken broth into the pan.
  4. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
  5. Let rest for 10-15 minutes before carving.
