  • 2 cups heavy cream (divided)
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 5 large egg yolks

Instructions

  1. Prepare 1 cup of heavy cream in a medium bowl and set aside.
  2. In a saucepan over medium-low heat, combine the remaining heavy cream, whole milk, sugar, salt, and vanilla. Stir until the sugar dissolves and the mixture steams without boiling.
  3. Whisk egg yolks in a small bowl; gradually add about one-third of the hot mixture while whisking. Pour back into the saucepan.
  4. Stir continuously until the mixture thickens enough to coat the back of a spoon. Strain into the bowl with reserved heavy cream and cool over an ice bath.
  5. Chill in the refrigerator for at least 24 hours before churning according to your ice cream maker’s instructions. Add roasted strawberries during the last few minutes of churning.
