- 1 green chili or jalapeño, sliced

- 1/2 avocado, sliced
Instructions
- Heat olive oil in a skillet over medium-high heat. Add sweet potatoes and cook for 3-4 minutes until starting to soften. Add broccoli, mushrooms, and green chili; sauté another 4-5 minutes until tender. Season with salt and pepper.
- In a mixing bowl, whisk together the eggs with milk (if using), salt, and pepper. Heat butter or oil in another pan over low-medium heat. Pour in the egg mixture and stir gently until soft and creamy. Sprinkle cheese on top while warm.
- Slice the avocado, lightly seasoning it with salt.
- Plate the scrambled eggs next to the sautéed veggies and serve with avocado slices.
