- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 pound ground beef or lamb
- 1 small onion, diced

- ¾ cup frozen peas
- ½ cup milk
- 2 tablespoons butter

Instructions

- Stir in tomato paste, beef broth, peas, salt, and pepper; simmer for about ten minutes.
- Slice off the top third of each baked potato and scoop out most of the insides into a bowl.
- Mash scooped potato with milk, butter, garlic powder, salt, and cheese if desired.
- Fill each potato skin with the meat mixture; top with mashed potatoes and cheese if using.
- Bake for another 10–15 minutes until golden.
