  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 6 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. In a mixing bowl, toss chicken cubes with olive oil and spices until well coated. Heat a skillet over medium heat and cook chicken for about 5-6 minutes until browned and fully cooked.
  2. In another bowl, combine cucumber, tomatoes, red onion, herbs, lemon juice, salt, and pepper. Toss well and chill while the chicken cooks.
  3. To assemble the bowl, layer cooked rice at the base followed by any greens if using. Top with grilled chicken cubes and sliced avocado. Spoon over the cucumber salad and drizzle with spicy mayo before serving.
