  • 4 large portobello mushroom caps
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1/2 cup finely chopped onion
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese (plus extra for garnish)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Brush both sides of the mushroom caps with olive oil and place them gill-side up on the baking sheet. Bake for about 10 minutes until they begin to release water.
  3. In a skillet over medium heat, sauté minced garlic and chopped onion in olive oil until softened (about 3-4 minutes). Add spinach and cook until wilted (approximately 2-3 minutes). Let cool slightly.
  4. In a mixing bowl, combine the sautéed vegetables with ricotta, Parmesan, salt, black pepper, and nutmeg. Mix well.
  5. Spoon the filling into each mushroom cap and top with shredded mozzarella cheese.
  6. Return to the oven and bake for another 15-20 minutes until the cheese is bubbly and golden brown.
  7. Garnish with additional Parmesan before serving.
