  • 1 cup heavy whipping cream (cold)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three round cake pans or line them with parchment paper.
  2. In a large bowl, combine the white cake mix and strawberry plant-based gelatin powder. Add eggs, milk, oil, sour cream, mashed strawberries, and vanilla extract. Mix with an electric mixer on medium speed until smooth (about 2-3 minutes).
  3. Divide the batter among the prepared pans and bake for 22-28 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  4. For the frosting: Beat softened cream cheese and unsalted butter until fluffy. Gradually mix in powdered sugar and vanilla extract; then add cold heavy whipping cream until fluffy.
  5. Level each cooled cake layer, stack them with frosting in between layers, and frost the top and sides of the assembled cake.
