Ingredients

- 1 cup whole milk

- 1 box white cake mix (15.25 oz)
- 1 box strawberry-flavored plant-based gelatin (3 oz)
- 8 oz cream cheese, softened
- 1 cup unsalted butter, softened
- 2–3 cups powdered sugar, sifted
- 2 teaspoons vanilla extract
- 1 cup heavy whipping cream (cold)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three round cake pans or line them with parchment paper.
- In a large bowl, combine the white cake mix and strawberry plant-based gelatin powder. Add eggs, milk, oil, sour cream, mashed strawberries, and vanilla extract. Mix with an electric mixer on medium speed until smooth (about 2-3 minutes).
- Divide the batter among the prepared pans and bake for 22-28 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
- For the frosting: Beat softened cream cheese and unsalted butter until fluffy. Gradually mix in powdered sugar and vanilla extract; then add cold heavy whipping cream until fluffy.
- Level each cooled cake layer, stack them with frosting in between layers, and frost the top and sides of the assembled cake.
