  • 3 egg yolks
  • 1 tsp vanilla extract (5mL)
  • 1/2 lb all-purpose flour (225g)
  • 1/2 cup unsalted butter (113g, cool & cubed)
  • ¼ tsp salt (1g)
  • 1 tsp matcha powder
  • 80 g confectioners sugar
  • 3 egg yolks
  • 1 tsp vanilla extract (5mL)
  • 1/2 lb plain flour (215g)
  • 1/2 cup unsalted butter (113g, cool & cubed)
  • 2 tbsp powdered strawberries
  • ¼ tsp salt (1g)
  • 3 drops soft pink food coloring
  • 1 cup white chocolate chips (200g)
  • 1/2 cup heavy cream (110g, heated)
  • 2 egg whites at room temperature
  • 1 cup unsalted butter (452g, room temperature)
  • 3/4 cups granulated sugar (300g)
  • 1 pinch kosher salt
  • 1 tsp vanilla extract (5mL)
  • 8 strawberries (hulled and sliced)
  • 1 tbsp lemon juice (15mL)
  • 1/4 cup sugar
  • 1 tbsp light corn syrup
  • 8 oz mascarpone (room temp)
  • 1/4 cup powdered sugar
  • 1/4 cup strawberry reduction
  • 1/2 cup white candy melts
  • 2 tbsp powdered strawberries
  • 2 tbsp matcha powder

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the tart shell by mixing confectioners sugar, egg yolks, vanilla extract, flour, butter, and salt until a dough forms. Press into a greased tart pan. Bake for 19 minutes until golden.
  2. Prepare the matcha filling by whisking matcha powder, confectioners sugar, egg yolks, vanilla extract, flour, cubed butter, powdered strawberries, and salt until smooth. Pour into the cooled shell and bake for 15 minutes.
  3. Melt white chocolate chips with heated cream; pour over the cooled tart filling.
  4. For Swiss meringue buttercream, whip egg whites until soft peaks form; gradually add sugar for stiff peaks then incorporate butter until smooth. Spread on top of the tart.
  5. Garnish with sliced strawberries drizzled with lemon juice mixed with sugar.
